Coconut Cake



4 eggs

1 cup of milk

1 cup of oil

1 cup of sugar

2 cups of flour

1 cup of coconut

2 tea spoons baking powder

½ cup of coconut (for sprinkling)

Glace cherries (for decorating)






1 cup of water

1 cup of sugar

1 small stick of cinnamon

1 clove




Beat the sugar with the eggs well in.

Continue doing so whilst adding oil, then milk.

Follow this by adding the flour with the baking powder and the coconut.

Cook in pre-heated oven at 170-180°c  for about 30 minutes.

Remove the cake from the oven and apply evenly the cold syrup and top the cake with the coconut.

You can garnish the cake with sweetened cherries.
